How would you act toward someone you discovered didn't want to date you because of your race or culture?

In late February of this year, I met a young woman at my university with whom I had a coffee; our meeting was under no pretense. After asking her out to dinner during our next conversation, she bailed the day we were to go out. Eventually, I obtained information from an indirect, but reliable source that she didn't want to date me because of my culture/race. How would you move on if you were me? Also, ff you were to cross paths with her, what would you say/how would you act?
