If she says that she really is your friend, you just have to trust her to be truthful. Does she have any way of contacting you? If not, then I don't know what to tell you. If you truly said those exact words to her and she did not appreciate the admiration you had for her, then maybe you don't want to be friends with her, anyway. :\
